A quick, cheap and easy lunch, made with leftover potatoes.
Ingredients
Leftover boiled potatoes
1 egg, seperated
Half an onion, grated
Mozerella or other easy to melt cheese
Fine breadcrumbs
Flour for dusting
How to go about it
Grate the potatoes, you can leave them unpeeled, if you wish. Mix the the grated potato with the grated onion and the egg yolk. Season well with salt and pepper. Take a large spoonful of potato and flatten it, place the cheese on top and mould the potato around it, put a bit extra on top, if needed.
Dust with flour
Lightly beat the the egg white and dip the cakes into it and then cover in bread crumbs.
Fry in hot oil in a non-stick frying pan for a few minutes on each side. Serve with salad and french dressing.
